2 cups Mashed Potatoes
3/4 lb ground beef
1/2 cup chopped onion (1 medium)
1 9-oz package frozen cut green beans or 2 cups loose-pack mixed veggies
1/4 cup water
1 14 1/2 oz can Italian-style stewed tomatoes
1/2 of a 6 oz can (1/3 cup)tomato paste
1 tsp. Worcestershire sauce
1/4 tsp. pepper
Paprika (optional)
Prepare Mashed Potatoes. Set aside. In a large skillet cook ground beef and onion till meat is no longer pink and onion is tender. Drain off fat.
Meanwhile, if using beans, run cold water over them to separate; drain. Stir beans or mixed veggies and water into beef mixture. Cook, covered, for 5-10 mins. or till veggies are tender. Stir in the undrained tomatoes, tomato paste, Worcestershire sauce, and pepper. Bring to boiling. Transfer mixture to a 1 1/2 quart casserole.
Drop Mashed Potatoes in mounds atop hot mixture. (I just spread mine)If desired, sprinkle paprika. Bake in a 375 degree oven for 20 - 25 mins or till heated through. Makes 4 servings.
* Note: I usually add shredded cheese on top of my mashed potatoes.
